Chicken Parmesan Rolls

I tried this recipe recently for my family. Needless to say, it was very tasty. It was a bit time consuming, and a little messy, but the results were fantastic!

So if you want a very easy and simple way to put a nice twist on the classic chicken parmesan, try the roll up version. Totally gratifying!

What you will need:

Chicken cutlets (as many as you would like to make)
Tomato sauce or Spaghetti sauce (you can use your preference)
Mozzarella cheese (sliced cheese will be less messy than shredded)
Bread crumbs
Olive oil
Some toothpicks (for holding the rolls together)

Preheat the oven to 350 degrees F
First you want to slice the cutlets as thin as you can (not paper thin)
You are then going to spread the tomato sauce over the chicken.
Place a slice or shredded mozzarella on top of the chicken.
Roll up the chicken tightly and use the toothpicks to hold it in place.
Then dip the chicken into the olive oil, and then roll in the bread crumbs.

Bake for 40 minutes.
Use the last 10 minutes to sprinkle or place a slice of mozzarella cheese.

You're done!

I decided to serve this over some Angel Hair pasta, but you could use rice or even a larger pasta if you prefer. I hope you guys enjoy it! I sure did.
