Delicious Marbled Brownie from scratch


Bouncing around the web, I managed to get my hands on another variation for Marbled Brownies. It's essentially the same concept as my previous entry, with a few differences. Try them, they are wonderful!

Here's what you will need:

8 ounces of bittersweet chocolate
8 ounces unsalted butter (2 sticks)
2 cups sugar, divided
6 large eggs
1 cup flour
1/2 tsp freshly ground nutmeg (preferably)
A pinch salt
24 ounces cream cheese
1 tsp vanilla extract

Preheat oven to 325 degrees. Butter sides and bottom of a 10x15-inch pan. Melt the chocolate in a double boiler. Allow to cool slightly.

Combine the butter and 1 1/4 cups of the sugar in the bowl of an electric mixer. Cream on medium speed until light and fluffy using the paddle attachment.

Add 4 of the eggs one at a time and beat well. Stir in the melted chocolate and mix until smooth. Decrease to low speed and stir in the flour, nutmeg and salt.

Spread the chocolate batter in the pan, reserving about 1 cup for later use.

Combine the cream cheese and the remaining 3/4 cup sugar in a clean bowl of an electric mixer. Using the paddle attachment, beat on medium speed until smooth. Add the remaining 2 eggs and the vanilla extract and again beat until smooth.

Spread the cream cheese mixture in an even layer over the chocolate batter. Scatter spoonfuls of the reserved chocolate batter over the cream cheese mixture. With a knife, swirl the chocolate batter into the cream cheese mixture, creating a marble pattern.

Bake the brownies for 50 to 55 minutes, until a skewer inserted in the middle comes out clean. Cool for an hour before cutting.

Note: You can just use a whisk if you do not have an electric mixer.

Macadamia Nut Brownies

I got put on to Macadamia nuts from way back when I was a kid. My mother adored these tasties. Now how much more do you think she likes them now? Yum!



Macadamia Nut Brownies

1 cup (2 sticks) butter
5 squares unsweetened baking chocolate
5 eggs
2 cups sugar
1 1/3 cups flour
1/4 tsp baking powder
1/4 tsp salt
1 tsp vanilla
2 cups Macadamia nuts, chopped

In a microwavable bowl, melt butter and chocolate, stirring to combine.
Add remaining ingredients except nuts. Beat with electric mixer for 2 minutes. Stir in nuts.

Pour into a buttered or parchment lined 9x13 inch pan.

Bake in a 350°F oven for 25 minutes or until done. Be careful not to over bake. Brownies should be quite moist.

Allow to cool before cutting into serving size pieces. Brownies may be wrapped well and frozen to add to lunch boxes (will thaw by lunch time!).

Cream Cheese Brownies

To be honest, I am not a huge fan of cream cheese, at least not by itself. So when I came across this brownie recipe, I thought to myself "...might just give it a try". Glad I did. These are so good. I'm slowly warming up to the idea of cream cheese. For those of you who do like/love cream cheese, then you will enjoy these.



Cream Cheese Brownie

4 squares unsweetened chocolate
3/4 cup (1-1/2 sticks) butter
2-1/2 cups sugar
5 eggs
1-1/4 cups flour
1 8 oz pkg cream cheese, softened

Preheat oven to 350°F. Grease a 13x9-inch aluminum foil baking pan.Read through this recipe entirely before you begin, as you will need to divide ingredients into separate batters in order to create two layers.

Microwave together the chocolate and butter on high setting 2 minutes. Stir in 2 cups of the sugar and blend well. Stir in 4 eggs and 1 cup of flour. Spread this mixture in the greased pan.

Beat cream cheese, gradually adding remaining ingredients. Combine well.
Spoon second mixture over batter already in pan. Swirl together lightly stirring with knife to create a marble-like pattern.

Bake in Preheated 350 degree oven for 40 minutes or until toothpick has grainy fudge bits but is not clean, like in a cake. Be careful not to overbake.

Chewy Brownies

It's late. Kids are asleep. You have that pint of rich vanilla ice cream in the freezer. Now what would be an appropriate partner for a night like this? How about some brownies? You gotta love a chewy, chocolately, delicious brownie. Here's  a recipe that I think you guys would absolutely fall in love with.



Chewy Brownies

1/2 cup butter
3 oz unsweetened baking chocolate
1 oz semi-sweet baking chocolate
1 1/4 cups sugar
1/2 cup pecans or walnuts, chopped
1 tsp vanilla
1/2 tsp dark rum
3 eggs
1 1/4 cups flour
1/4 tsp salt

Preheat oven to 375°F. Grease bottom of an 8 inch square baking pan.Melt both chocolates with butter in a medium saucepan stirring over low heat until smooth (about 5 minutes). Remove from heat.

Stir in sugar. Add eggs, one at a time, mixing well after each addition. Mix in flour, salt, vanilla, rum and nuts, stirring only until mixture is smooth and ingredients are combined. Once flour has been added, do not overmix to prevent toughening.

Spread mixture into prepared pan.

Bake for 25 to 35 minutes or until brownies begin to shrink from sides of pan.
Allow to cool before cutting into squares.

Note: if your brownies are dry or tend to be overbaked consistently, reduce the temperature of your oven by 25 degrees.

Recipe can be doubled by baking twice the amount of all ingredients in a 13x9 inch pan. Bake for 35 to 40 minutes.
